Today, I’m excited to introduce a new, highly entertaining culinary experience offered by The Prince Gallery Tokyo Kioicho. The restaurant is launching “IMMERSIVE DINING,” a new dining experience where you can enjoy projection mapping, sound, and stunning night views—all alongside exquisite cuisine!

A sensory culinary experience at The Prince Gallery

At “WASHOKU SOUTEN” in The Prince Gallery Tokyo Kioicho, traditional flavors are recreated with a contemporary touch. This restaurant is now launching an exciting new endeavor: a never-before-seen immersive dining experience that harmonizes night views, cuisine, visuals, and sound.

What are the courses that define “WASHOKU”?

You can choose between two courses: “JAPONISM Wa” and “STELLA Chū.”

“JAPONISM Wa” lets you savor the essence and cuisine of Japanese culture, while “STELLA Chū” draws you into a mysterious world of unknown planets. Here’s a brief look at each course.

Diving into Japanese elegance: “JAPONISM Wa”

This course is a journey through Japanese aesthetics—Japan’s nature, landscapes, culture, and seasonal transitions. It offers a new take on Japonism, blending dynamic presentations with creative Japanese cuisine.

For example, in the “Sashimi – Senpabanpa,” the ever-surging waves of Japan’s rough seas and the sparkling bubbles underwater are recreated. Savoring the fresh seafood with two kinds of beautiful bubble soy sauces fills your mouth with the taste of the sea!

Exploring seven unknown stars: “STELLA Chū”

“STELLA Chū” offers a distinctive immersive dining experience with stylish geometric designs and floating animations.

Take the “Warm Dish – Suna” as an example: finished with perilla leaf ajillo and chili oil powder, it evokes a red-rust desert planet. The boiling oil represents the searing storm of an infernal world, while the dry chili powder portrays the shifting sands.

A creative culinary experience by Executive Chef Ken Takahashi

The immersive, dreamlike dishes and space are the brainchild of Executive Chef Ken Takahashi, who specializes in contemporary cuisine rooted in traditional Japanese cooking.

Since the hotel’s opening, Chef Takahashi has consistently served innovative, contemporary dishes. He was the first Japanese chef to participate in the global culinary event “Culinary Safari” in Mallorca, Spain, and he has also collaborated with chefs in Milan, Italy.

Celebrated for his artistic presentations and attention to detail—from plating to staging—Chef Takahashi says he wants guests from around the world to experience the delicacy and creativity of Japanese cuisine.

That vision gave birth to these two culinary stories expressed through food.
